Paleo Chocolate Chip Banana Nut Muffins

Banana nut muffins are some of my favorite quick and easy breakfasts or snacks to take on the go with me! There are a lot of people who don’t think it’s possible to make delicious baked goods that are healthy for you, but when you’re eating paleo…it’s beyond possible.

This recipe came to life when Wildway Granola sent me a few bags to try. Their banana nut granola inspired me and I had no choice but to whip up a batch of some delicious, chocolate chip banana nut muffins. These muffins are sweet and salty with a crunch from the delicious granola topping. They also feel a little naughty with the chocolate in there, but it adds the perfect balance and boost of antioxidants to kick start your day!

Chocolate Chip Banana Nut Muffins

Paleo muffins topped with crunchy granola to give you a kick start to your day!

Makes 14-15 muffins

Ingredients:

  • 1 3/4 cup blanched almond flour

  • 1/2 cup tapioca flour

  • 1/3 cup coconut sugar

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1/2 tsp paleo baking powder

  • 1/4 tsp sea salt

  • 4 ripe bananas, mashed

  • 1/4 cup melted & cooled coconut oil

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1 bar of paleo chocolate chopped (I used Evolved Signature Dark)

  • 1 bag of Wildway Banana Nut Granola

Recipe

  1. Preheat the oven to 350 degrees.

  2. Line a muffin tin with muffin liners.

  3. Mix all the dry ingredients in a small bowl and whisk together.

  4. Mix all the wet ingredients in a large bowl and whisk together.

  5. Pour dry ingredients into wet and combine with a rubber spatula.

  6. Chop chocolate bar and mix into the batter.

  7. Use a large cookie dough or ice cream scoop to pour even amounts of the batter into the muffin liners.

  8. Top with as much of the granola as you’d like.

  9. Bake for 20 mins, or until a toothpick comes out clean. 

  10. Cool on a baking rack until ready to eat!
